This coffee has been cupped (professionally tasted) for us by the great team at Royal Coffee. All five evaluators rated the Honey Coffee very highly, between 87 and 90. The consensus is that this coffee is best described as a very clean, well balanced, honey-sweet fruity flavor, with a firm texture.




Unlike the washed processing method, which removes the sweet mucilage from the cherry, this coffee is processed with the mucilage on the bean. This allows the mucilage to recede into the bean, giving the coffee its sweet flavor. That sweet flavor is in every cup, thanks to the quality control that comes with growing and processing all of the beans on one farm.

In order to maximize the flavor, Juan de Dios Castillo Arauz separates his honey coffee from beans that are processed in other ways. This ensures that water does not get into the supply of Nicaragua Organic La Pastoral Honey Coffee. Even a small amount of water can wash the mucilage away, so this is critical.

Once separated, Juan de Dios Castillo Arauz gives the beans ample time to dry to ensure that the mucilage soaks into them. With the farm’s location at 1200 to 1350 meters altitude, the coffee beans have easy access to sunlight. This optimizes the fermentation process, which maximizes the flavor in each cup of Nicaragua Organic La Pastoral Honey Coffee.
