Mocha Molasses Sugar Cookies

The yearly approach of the holiday season is a beloved time at Cafè Altura. The holidays bring a welcome change to colder weather, a few days off to spend time with family and friends, and, most importantly, an excuse to consume copious amounts of tasty treats. In the spirit of the season, our COO Dillon Miskiewicz decided to recreate the cookies he ate at the Thanksgiving celebrations of his youth. The 2018 version of the Miskieiwcz family recipe comes with a few twists, however; Dillon added molasses and our very own Organic Instant Coffee, which lend a delightful balance of sugary sweetness and roasty coffee flavor. The recipe for these delectable cookies was too good not to share, and we hope you enjoy them with your loved ones this holiday season!


1-1/2 cups organic butter, softened
2 cups organic sugar
2 large organic eggs, room temperature
1/2 cup organic molasses
4-1/2 cups organic all-purpose flour
4 teaspoons ground organic ginger
2 teaspoons baking soda
1-1/2 teaspoons ground organic cinnamon
1 teaspoon ground organic cloves
6 tablespoons of organic instant or finely ground coffee
1/4 teaspoon salt
3/4 cup coarse organic sugar


  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves, salt, and coffee; gradually add to creamed mixture and mix well.
  • Shape into 2-in. balls and roll in coarse sugar. Place 2-1/2 in. apart on un-greased baking sheets. Bake 13-15 minutes or until tops are cracked. Remove to wire racks to cool.
